Monday Motivation: Skillet Turkey Meatballs

We don’t eat that much turkey in this house, especially not ground turkey, but everyone once in a while it is nice to get away from our staple meats of chicken and beef. So, after a full weekend, I decided to end the weekend with warm turkey meatball subs and a side salad. However, these meatballs would also be great on top of spaghetti noodles or even by themselves. I got two thumbs up from Bryson and Auggie ate a least a few bites, so I feel like that’s a good enough review to share.You can find the recipe below if you’d like to try them.  

Skillet Turkey Meatball Sub Sandwiches

SERVINGS: 5 Turkey Meatball Sub Sandwiches PREP TIME: 10 Minutes COOK TIME: 30 Minutes TOTAL TIME: 40 Minutes

INGREDIENTS

DIRECTIONS

  1. Combine ground turkey, egg, breadcrumbs, and seasoning into a bowl. Mash together until well blended. Mash together in 1 inch balls.
  2. Heat oil in a pan on the stove. I used cast iron.
  3. Place meatballs into the pan and cover with lid. Continue to turn meatballs about every two minutes until browned on every side. 
  4. Add marinara sauce and shimmer for 15 minutes.
  5. Set oven to low broil.
  6. Open Hoagie Buns and place face up on a baking sheet.
  7. Place 2-3 meatballs in each bun and top with shredded cheese.
  8.  Place in oven until bun is toasted and cheese is melted. About 5 minutes.
  9. Serve warm.

NUTRITION

I have absolutely no idea the nutritional value of these meatballs, but I know they’re good, they’re homemade, and ground turkey is better for you than ground beef. Maybe just eat in moderation. 🙂
